Saffron is harvested from Crocus sativa plants and has been used for over 3,500 years. Alexander the Great and Cleopatra used saffron in their baths, infusions, rice, and as a curative for battle wounds and depressive disorders. Buddhist monks previously wore saffron-dyed robes.
Saffron is used in dishes ranging from the jewelled rice and khoresh of Iran, the Milanese risotto of Italy, the paella of Spain and the bouillabaisse of France and the biryani dishes of South Asia.
This is saffron with an alum mordant, so the colour is sunnier and more golden. Pics compare the colours of saffron (3) with this saffron 1.
